Barramundi vs Basa vs Tilapia: Which White Fish for Foodservice?

Choose barramundi for a firmer, premium fillet that holds up to grilling and pan-searing; basa (pangasius) for the lowest-cost, mild fillet for fried and sauced dishes; and tilapia for a lean, mild, mid-priced everyday fillet. All three are farmed white fish, but they behave very differently in the kitchen and sit at different price points.

How they perform in the kitchen

Barramundi keeps its shape on the grill, in a pan and in the oven, and its skin crisps like a premium fish. It suits plated restaurant dishes, skin-on fillets and portion-controlled menus where the fish is the star.

Basa / pangasius is very soft and mild, so it takes on batter, sauces and spices well. It is the value choice for fish and chips, curries, fish fingers and buffet lines, but it can break up on a grill.

Tilapia sits in between: lean and mild, with medium texture. It works for everyday baked, steamed and fried dishes and for retail packs where price matters.

Nutrition

All three are good sources of lean protein. Barramundi is generally higher in omega-3 fatty acids than tilapia and pangasius, which is often part of how it is marketed.

Which one should you buy?

  • Premium menu item, grilled or pan-seared, skin-on: barramundi
  • Lowest cost per portion, battered or sauced: basa / pangasius
  • Everyday retail and mid-price foodservice: tilapia

If you are trading up from basa or tilapia to barramundi, expect a firmer, larger-flaked fillet and plan for a higher cost per portion. Ask your supplier for samples in your exact size grade before changing a menu.
